These Cranberry Cups are a must for the holidays for our family!  I’m not a fan of the traditional jellied cranberry, so when I tried these for the first time, I was super excited! 

The combination of the strawberry jello and the pineapple make these a little sweeter, and they are always a hit.  Some years, I even make the recipe in a casserole dish when I don’t have muffin cups.

These little suckers aren’t the easiest to photograph either.  Those are FOIL muffin liners even though it is a little hard to tell from the photos. 😉

Tips for Making Cranberry Cups:

• Use a small 3 oz box of strawberry jello.
• You can leave the pecans out if you’d like.
• This recipe can be put into a small casserole dish instead of individual muffin tins.
• Use foil muffin liners.

Cranberry Cups

Yield: 12

Cranberry Cups - The perfect way to make cranberry sauce pleasing for everyone!  This recipe uses strawberry jello and crushed pineapple to create a wonderful cranberry fruit salad in a muffin cup.  These are great for individual servings!

Ingredients

• 8 oz crushed pineapple, packed in juice
• 2 tbsp lemon juice
• 3 oz package strawberry jello mix
• 14 oz can whole berry cranberry sauce
• 1/4 cup chopped pecans
• 1/2 water

Instructions

1. In a bowl, drain pineapple juice and reserve the juice. Add juice to saucepan with water and lemon juice. Heat until boiling.
2. Remove from heat and add Jello and stir well to combine.
3. Break up cranberry sauce with a fork. Add cranberry sauce , pineapple, and pecans to Jello mixture and stir to combine.
4. Pour into foil muffin liners. Place liners in muffin tin to make them easy to store. Refrigerate for at least 2 to 4 hours until set.
5. Don't have muffin liners? This can also be poured into a small casserole dish to serve as well.

If you like easy dessert recipes like me, then this Pumpkin Toffee Poke Cake is the one for you to make this fall!  It starts with a box cake mix, which is usually my go-to dessert strategy.  Once you doctor it up a bit with canned pumpkin and cinnamon, it completely transform the batter for fall.

Canned sweetened condensed milk also doesn’t hurt any recipe, am I right?  It’s like liquid gold in a can.  Follow it up with caramel drizzle and chopped Heath bar candy and you have yourself a great little dessert that was super easy!

Tips for making this Pumpkin Toffee Poke Cake

• Make sure you buy canned pumpkin and not pumpkin pie filling.  
• If you can’t find milk chocolate toffee bits, you can chop your own Heath bars. 
• You can make homemade whipped cream for an extra special touch.

Pumpkin Toffee Poke Cake

Yield: 12

Prep Time: 15 minutes

Total Time: 15 minutes

Pumpkin Toffee Poke Cake - An easy pumpkin dessert recipe filled with toffee and caramel and perfect for the fall season!

Ingredients

• 1 box yellow cake mix
• 1 cup canned pumpkin
• 1/2 cup milk
• 1/3 cup vegetable oil
• 4 eggs
• 1 tsp pumpkin pie spice
• 2 tsp cinnamon
• 1 can sweetened condensed milk
• 3/4 to 1 cup milk chocolate toffee bits
• 8 oz cool whip
• Topping: jarred caramel sauce

Instructions

1. Preheat oven to 350.
2. In a large bowl, beat cake mix, pumpkin, milk, oil, eggs, pumpkin pie spice, and cinnamon on low speed until mixed and then increase speed to medium and beat for 2 minutes. Pour into 13 x 9 pan and bake for 25 minutes or until center is set and toothpick comes out clean. Let cake rest for about 5 minutes.
3. Using the handle of a wooden spoon, poke several holes through the cake in rows. I make about 20 holes.
4. Drizzle the sweetened condensed milk into all the holes and on top of the cake. Next, drizzle caramel sauce into holes. I do not measure this amount. I just drizzle it all around. Sprinkle with about 1/2 cup of toffee bits over the top. Allow cake to cool.
5. Top with cool whip. Sprinkle with remaining toffee bits. You can drizzle more caramel at this point and refrigerate or you can drizzle the caramel once you slice and serve it. You can serve it once cooled, but we like it best refrigerated a few hours before serving.

This Pumpkin Praline Trifle has been waiting to make it’s appearance on this blog for the last few years.  It’s a dessert I’ve made for the past two Thanksgiving dinners, but I never got around to posting it before the holiday.

But you can be assured that if I made it two years in a row, it was a crowd-pleaser.
Dessert is probably the best part of Thanksgiving in my opinion.  My sister and I each make one or two of them.  We have rules too.  There must always be something pumpkin and at least one chocolate dessert.  Then you need at least one pie.  That way your dessert plate can have a little sample of everything 🙂

This Praline Pumpkin Trifle is great to make the day or night before your Thanksgiving dinner plans too.  Since it involves layers and some cooling time, you need to carve out some time in your day to get the individual components done and then later, you can layer it up and stick it in the fridge!  Dessert done!

This dessert is decadent, divine, and just screams Thanksgiving.  So if you are looking for a new pumpkin dessert to try, this Pumpkin Praline Trifle is the one to try!

Pumpkin Praline Trifle

Yield: 8 to 10

Pumpkin Praline Trifle - This is the ultimate fall dessert recipe with layers of easy pumpkin cake, cream cheese pudding, caramel, and praline pecans. It's delicious made ahead and great for the busy holiday dinners!

Ingredients

Pumpkin Cake Layer:

Toggle ingredient group

• 1 box yellow cake mix
• 1 cup canned pumpkin
• 1/2 cup milk
• 1/3 cup vegetable oil
• 4 eggs
• 1 tsp pumpkin pie spice
• 2 tsp cinnamon

Praline Pecans:

Toggle ingredient group

• 2 cups roughly chopped pecans
• 1/2 cup light brown sugar
• 4 tbsp heavy cream

Cream Cheese Pudding Layer:

Toggle ingredient group

• 2 3.5 oz instant vanilla puddings
• 3 1/2 cups milk
• 1 12 oz cool whip, divided
• 1 8 oz cream cheese
• 1/2 cup butter
• 1/2 cup powdered sugar

Topping:

Toggle ingredient group

• 1/2 cup jarred caramel sauce

Instructions

Cake Layer:

1. Preheat oven to 350.
2. In a large bowl, beat cake mix, pumpkin, milk, oil, eggs, pumpkin pie spice, and cinnamon on low speed until mixed and then increase speed to medium and beat for 2 minutes. Pour into 13 x 9 pan and bake for 25 minutes or until center is set and toothpick comes out clean. Allow cake to completely cool.

Praline Pecans:

1. Preheat oven to 350.
2. In a medium bowl, stir to combine pecans, brown sugar, and heavy cream. Spray a sheet pan with cooking spray. Spread pecans onto pan. Bake for 20 minutes or until coating is dry. Remove from oven to cool.

Pudding Layer:

1. In a large bowl, whisk pudding mixes with milk until combined. Let set for 5 minutes to thicken. Whisk again to combine. Add 1 cup whipped topping to pudding and stir.
2. In another bowl, beat cream cheese, butter, and powdered sugar for about 2 minutes. Add to pudding mixture and beat to combine.

Assembly Instructions:

1. Cut cooled cake into small squares. Layer some squares into the bottom of a large trifle dish or punch bowl.
2. Add 1/2 of the cream cheese pudding mixture over the cake squares.
3. Top with drizzled caramel sauce and some praline pecans.
4. Repeat cake square layer, pudding layer, caramel, and pralines.
5. Add last layer of cake squares, caramel, pralines.
6. Top with remainder of cool whip, drizzled caramel and remaining pralines.

 So have you all started making your Thanksgiving plans?  It’s less than 2 weeks away.  No pressure or anything.  I always get so excited when my family starts saying what dishes they are making.  We usually have a plethora of sides and desserts.  We all have our signature dishes too.  My sister always makes the rolls and I always make the pea salad (which I don’t have that recipe here on the blog yet…how do I not have that on here?)   And my mom always makes the green bean casserole.  Down here in Louisiana, we don’t really have stuffing.  We usually have cornbread dressing…my sister’s other signature dish.  We also like to enjoy a fried turkey too:)

But I love how the sides get a lot of attention on Thanksgiving Day.  I’m a “sides girl.”  I have some good side dish recipes HERE.  The favorites are this Baked Potato Casserole and this Layered Salad.  They are tried and true recipes that came from my husband’s family, and I make them every year for my side of the family now too.

But the grand finale is the dessert table!  It’s really okay in my book if everyone brings a dessert.  The more the merrier in my opinion!  You have to have at least one pie like this Triple Mocha Mud Pie I posted the other day.  And this Fudge Pecan Pie is to die for good too!  And I love a good trifle dish that’s easy to scoop like this Chocolate Dream Trifle or this Chocolate Praline Trifle.

But I think everyone has to have a pumpkin dish for those pumpkin-lovers.  And this Pumpkin Pecan Cake could not be easier!!  It’s actually more of a pie bar than a cake.  But the crust is on the top rather than the bottom.  And that crust is just sprinkled on cake mix, butter, and pecans.  It’s a dump cake in pumpkin pie form!  And it cuts in perfect squares once it’s cooled!  It would be really yummy with a little dollop of whipped cream too!

Pumpkin Pecan Cake

Yield: 12-15

Ingredients

• 1 15 oz. can pumpkin puree
• 1 12 oz. can lowfat evaporated milk
• 1 cup brown sugar, packed
• 3 eggs
• 2 tsp pumpkin pie spice
• 1/2 tsp cinnamon
• 1/2 tsp salt
• 1 box yellow cake mix*
• 1 1/2 sticks butter, cubed
• 1/2 cup chopped pecans
• Optional: Whipped Topping or Homemade Whipped Cream

Instructions

1. Preheat oven to 350 degrees and spray a 13 x 9 pan with cooking oil spray.
2. In a bowl, whisk pumpkin, milk, brown sugar, eggs, pumpkin pie spice, cinnamon, and salt until combined. Pour into pan.
3. Sprinkle dry cake mix over the entire surface using a spoon to carefully spread it to the edges.
4. Top with cubed butter evenly over the cake mix. Sprinkle on the pecans.
5. Bake for 1 hour. Cool completely before cutting into squares. Refrigerate after serving.
6. *You can serve with a dollop of whipped cream.

Notes

*I have tested this recipe with both 13 oz and 15 oz cake mixes. Both work great!
