How to Make this Cajun Chicken and Rice Soup:

1. Chop your chicken, season it, and cook in olive oil. Remove from pot.
2. Saute your veggies and add in corn, beans, and rice.
3. Add chicken back to pot with chicken broth and simmer.

Quick Cajun Chicken and Rice Soup

Cook Time: 40 minutes

Total Time: 40 minutes

This quick and easy Cajun Chicken and Rice Soup is packed with chicken, fire-roasted tomatoes, corn, zucchini, beans, and rice, full of Cajun flavor, and a Creole kick.

Ingredients

• 1 1/2 tbsp olive oil, divided
• 1.5 pounds boneless chicken breasts, cut up into 1 in pieces
• 2 tsp creole seasoning, divided
• 1 yellow onion, diced
• 1 yellow bell pepper, diced
• 1 zucchini, sliced
• 11 oz can fiesta corn, drained
• 15 oz great northern beans, undrained
• 15 oz can fire-roasted tomatoes
• 1/4 cup rice
• 32 oz low-sodium chicken broth.
• chopped green onions for topping (optional)
• diced avocado for topping (optional)

Instructions

1. In a soup pot or dutch oven, heat 1 tbsp olive oil over medium high heat.
2. Season chicken breasts with 1 1/2 tsp creole seasoning and add to pot. Saute for about 15 minutes. Remove from pot.
3. Add 1/2 tbsp olive oil to the pot. Add diced onion, diced bell peppers, and sliced zucchini. Saute for about 5 minutes.
4. Add in drained corn, fire-roasted tomatoes, great northern beans, and rice and stir to combine. Season with remaining 1/2 tsp creole seasoning.
5. Add chicken back to pot. Add in chicken broth and bring to a simmer for about 20 minutes.
6. Serve warm and top with green onions and diced avocado.

This is a delicious pasta filled with a tomato basil cream sauce. The recipe came from my favorite Creamy Tomato Basil Soup. For a long time, I wanted to turn that soup into a pasta dish, and boy was I glad I did!

Cajun Shrimp Mac and Cheese

This Cajun Shrimp Mac & Cheese came about after our trip to Nantucket where I had a version of this. I loved it so much, I came home and recreated it! That is one of my favorite parts of traveling….the food research 🙂 I am so proud of how well this recipe came out!!

It’s one of my favorite easy dinner options because it feels fancy, but it’s incredibly simple to make. One pot, big flavor, and a seriously comforting bowl at the end.

How to get this soup ready quickly on busy nights:

• Prep as much as you can on the weekend. For example: cut up and season your chicken breasts. Cut up your onion. Having this done ahead of time, takes a lot of the dread out of cooking when you get home from a busy day.
• If you don’t have time to prep on the weekend, cut the chicken while the veggies are cooking, which saves on some of the prep time.

Cajun Chicken Chowder

Yield: 6 servings

Cook Time: 30 minutes

Total Time: 30 minutes

This Cajun Chicken Chowder is creamy, cozy, and packed with bold flavor—an easy 30 minute dinner that’s perfect for busy nights.

Ingredients

• 2 tbsp olive oil
• 4 tbsp butter
• 1 onion, chopped
• 2 cups cubed potatoes
• 2-3 tsp creole seasoning
• 1.5 lbs chicken, cut into 1 inch pieces
• 15 oz can cream style corn
• 4 oz cream cheese
• 2 cups half and half
• Optional: fresh parsley

Instructions

1. To a pot, add olive oil and butter and heat over medium high.
2. Add diced onion and cook for 8 minutes.
3. Add cubed potatoes and 1 1/2 creole seasoning. Cook for 5 minutes.
4. Add cut up chicken breast. Season with a little more creole seasoning, about 1/2 tsp to 1 tsp. Cook for about 10 minutes.
5. Add 1 can cream style corn and stir. Cook for about 3 minutes.
6. Add cream cheese and stir to melt cheese. After about 2 minutes add half and half and stir. Cook over medium for about 5 minutes. Taste to season and serve. Garnish with fresh parsley.

Jalapeno Sausage Cornbread

Jalapeno Sausage Cornbread - An oldie but a goodie recipe that just screams comfort food! It's perfect as a side for soup during all those cold months!

Ingredients

• 1 lb. breakfast sausage
• 1 -8.5 oz box jiffy cornbread mix
• 1 egg
• 1/3 cup sour cream
• 1/3 cup milk
• 1 cup shredded Colby Jack cheese
• 2 tbsp pickled sliced jalapenos
• 2 tbsb jalapeno juice from jar

Instructions

1. Preheat oven to 350 degrees.
2. Brown breakfast sausage in a skillet. Remove to a paper towel lined plate.
3. While sausage is browning, mix cornbread mix, egg, sour cream, and milk in a mixing bowl.
4. Stir in 1/2 cups shredded cheese, cooked breakfast sausage, jalapenos, and jalapeno juice.
5. Pour in a sprayed 7 x 10 baking dish.
6. Bake for 20-25 minutes or until it is golden brown.

I love this one because it is absolutely one of the most simple recipes on my site! It uses all the good shortcuts and even canned beans! I promise you won’t regret this decision! They really are a great shortcut! When I make this for my coworkers, everyone always asks for the recipe!

I know how much you guys are a fan of one-pot meals! I love them too! That’s why I have so many on my site. So I know you guys are going to love this One Pot Blackened Shrimp and Sausage too! It’s got such great flavor guys! It’s a little like this other favorite!

What do you need to make this One Pot Blackened Shrimp and Sausage Recipe?

• smoked pork sausage
• peeled shrimp, medium count
• yellow onion
• blackening seasoning
• chicken broth
• water
• fettuccine pasta
• heavy cream
• fresh parsley

How easy is this recipe to make?

• This recipe is really easy especially since it is a one-pot meal!
• Just brown your sausage and onion in a non-stick skillet followed by your seasoned shrimp.
• Stir in chicken broth and cook pasta.
• Finish it off with heavy cream.
• FULL RECIPE INSTRUCTIONS BELOW.

Tips for this recipe:

• Use your favorite smoked sausage. We use a local brand.
• Remove tails from shrimp or leave them on for a prettier presentation.
• Use really any pasta you like. My kids like fettuccine, but you could use bow-tie or penne pasta for this recipe as well.
• I like to use a non-stick skillet since I’m cooking pasta in this recipe. I have this one here and it is a favorite.

One Pot Blackened Shrimp and Sausage Pasta

Yield: 6

Sauteed sausage and blackened shrimp with a creamy Cajun flavored Alfredo sauce.

Ingredients

• 1 lb. pork sausage
• 1 lb. shrimp, medium count
• 1 onion, chopped
• 2 tsp blackening seasoning, divided
• 32 oz chicken broth
• 2 cups water
• 12 oz fettuccine pasta
• 1 cup heavy cream
• 2 tbsp fresh parsley

Instructions

1. Slice sausage and brown in a large saute pan over medium high heat until mostly browned for about 4 minutes. Add chopped onion and continue cooking over medium high heat for about 10 minutes. Remove sausage and onion from pan.
2. Season shrimp with 1 1/2 tsp blackening seasoning. Add to pan after removing sausage. Stir and cook for about 2 minutes. Add sausage and onion back to pan.
3. Add in chicken broth and water. Bring to a boil. Add fettuccine pasta (uncooked). Spread out pasta into liquid and continue to boil and stir occasionally until pasta is cooked.
4. Stir in heavy cream and season with remaining blackening seasoning. Allow to simmer over medium for about 5 minutes.
5. Top with fresh parsley and serve.

What ingredients are needed for this Chicken Tortellini Pasta Bake?

• butter
• cream cheese
• heavy cream
• garlic powder
• grated parmesan cheese
  You can use shredded parmesan cheese as well.
• basil paste
  If you don’t have basil paste, add 1 tsp dried basil or 1 tsp of dried Italian seasoning.
• kosher salt
  Want a little more spice? Add in 1 tsp creole seasoning into the alfredo sauce instead of the 1 tsp of kosher salt. Taste to season with a little more salt.
• refrigerated cheese tortellini
• chopped rotisserie chicken
• shredded mozzarella cheese

Tips for making this Chicken Tortellini Pasta Bake:

• You can change up the cheese to suit your preferences. You can add Colby Jack or Fontina if you’d like.
• I use a combination of white and dark meat from the rotisserie chicken.
• If you don’t have basil paste, add 1 tsp dried basil or 1 tsp of dried Italian seasoning.
• Want a little more spice? Add in 1 tsp creole seasoning into the alfredo sauce instead of the 1 tsp of kosher salt. Taste to season with a little more salt.

Easy Chicken Tortellini Pasta Bake

Easy Chicken Tortellini Pasta Bake - A quick creamy pasta recipe filled with a delicious homemade basil Alfredo sauce, cheese tortellini, rotisserie chicken, and shredded mozzarella cheese.

Ingredients

• 1 stick butter
• 3 oz cream cheese
• 2 cups heavy cream
• 1 tsp garlic powder
• 1/2 cup grated parmesan cheese
• 1 tsp basil paste
• 1 tsp kosher salt
• 36 oz refrigerated cheese tortellini
• 3 cups chopped rotisserie chicken
• 3 cups shredded mozzarella cheese

Instructions

1. Preheat oven to 350 degrees.
2. In a small saucepan, melt butter over medium heat. Add in cream cheese and stir until melted. Add heavy cream, garlic powder, basil paste, and salt. Stir and let it come to a boil and then reduce to a simmer for about 5 minutes. Stir in parmesan cheese. Remove from heat.
3. In a casserole dish, layer half of the tortellini pasta( no precooking required). Top with 1 1/2 cups rotisserie chicken, 1 cup shredded mozzarella, half of the cream mixture. Repeat layers once more. Top with remaining mozzarella.
4. Cover and bake for 30 minutes. Remove foil and turn on broiler to brown the cheese on top for about 2 or 3 minutes. Remove from oven and allow to cool for about 5 or 10 minutes before serving.

Notes

Substitutions:

• You can change up the cheese to suit your preferences. You can add Colby Jack or Fontina if you'd like.
• I use a combination of white and dark meat from the rotisserie chicken.
• If you don't have basil paste, add 1 tsp dried basil or 1 tsp of dried Italian seasoning.
• Want a little more spice? Add in 1 tsp creole seasoning into the alfredo sauce instead of the 1 tsp of kosher salt. Taste to season with a little more salt.
