I really can’t go wrong with a protein, cheese, and a tortilla in our house. My kids love any combination of this. And then when you get it all melty by grilling it real quick, it’s a whole other level of delish!

And truly there is nothing easier than throwing some chicken, barbecue sauce, and onions in a crockpot and letting it do all the work for you! I always feel like I’m winning at life when I make a slow cooker dinner. Ingredients and substitutions:

Chicken – I use boneless chicken breasts, but you can also use boneless thighs.
BBQ Sauce – Our favorite is Sweet Baby Rays.
Red Onion – Feel free to use a yellow onion, if that is what you have.
Tortillas (Burrito Size) – Store-bought is fine.
Creole Seasoning – This is basically my version of salt and pepper. If you don’t have this, just season your chicken with some salt and pepper before cooking.

  • It requires minimal ingredients.
  • It takes very little prep.
  • I can make it in my Instant Pot too if I had a busy morning. I even use FROZEN chicken breasts! See below for instant pot instructions.
  • My kids eat it well!
  • I can make it more carb-friendly by using a low-carb tortilla!!

Slow Cooker BBQ Chicken Wraps

Yield: 4 servings

Slow Cooker BBQ Chicken Wraps filled with barbecue sauce, melty cheese, and cooked red onions. An easy weeknight dinner busy families will love.

Ingredients

  • 3 boneless chicken breasts
  • 1 1/2 tsp creole seasoning
  • 1 red onion, sliced
  • 6 tbsp bbq sauce, plus more for serving
  • 4 burrito size tortillas
  • 1 cup shredded Colby Jack

Instructions

  1. Place chicken in slow cooker. Season with creole seasoning or salt and pepper.
  2. Top with sliced onions.
  3. Spread barbecue sauce over onions and chicken.
  4. Cover and cook on high for 3-4 hours or low for 6-7 hours.
  5. Remove chicken and shred. Add back to slow cooker to coat in sauce.
  6. Assemble tortillas: Layer chicken and onions, shredded cheese, and a little more barbecue sauce on to center of tortilla. Fold in sides of tortilla and roll until flat on both sides.
  7. Place in a skillet with a little olive oil heated over medium high heat. Grill on both sides and serve.

Notes

These can be made in the Instant Pot. Cook on high pressure for 15 minutes or 20 minutes, if using frozen chicken breasts.
