I love coming back from a trip and recreating something that was a favorite for me. This Pink Sunrise Cocktail was a must for me. I had a cocktail very similar to this one in a moment that was just such a highlight of our recent trip to England.

I had a delicious drink just like this Pink Sunrise Cocktail while sitting in the most quaint, old bar in the middle of Stow on the Wold in the Cotswolds. The bar was at the Old Stocks Inn, and it was one of many we visited on our recent trip! It was such a “pinch me moment.” So from the first moment I tasted this cocktail, I LOVED it and knew I had to try it at home!

And I am so happy to say, I think I nailed it! It is just a perfect summer drink! Here is what you need to make it, and the full recipe is below!

• Aperol
• Vodka
• Coco Lopez (cream of coconut)
• lime zest
• pineapple juice

Pink Sunrise Cocktail - A lovely blend of vodka, aperol, Coco Lopez, pineapple juice, and lime zest! It's a perfect summer drink!

Ingredients

• 1.5 oz (1 shot) vodka
• 1.5 oz (1 shot) Aperol
• 1 tbsp Coco Lopez
• 3 oz pineapple juice
• lime zest

Instructions

1. Add ice to a cocktail shaker. Add vodka, Aperol, Coco Lopez, and pineapple juice. Place lid onto shaker and shake to mix ingredients.
2. Pour through strainer into a small glass. Add a little lime zest to the top and enjoy!

Is it just me or is Aperol the drink of the summer? I see it everywhere! So recently this spring, I went to a hotel bar where we were staying and had a great version of this and had to recreate it for myself at home! Thus, my Aperol Rose was born.

What I love about this drink is that it’s not overly sweet. Often cocktails can be way too sweet for my taste. Plus, it’s easy to adjust to your taste preferences.

All you need is a few ingredients to make this Aperol Rose:

• Aperol liquor
• lemon vodka
• sparkling rose
• honey
• lemon

Tips for modifying this Aperol Rose:

• I usually do a 2 parts aperol to 1 part lemon vodka ratio, but this can be modified to 1 to 1. It’s really up to you!
• If you aren’t a fan of sparkling rose’, you can try sprite, diet sprite, or club soda.

Tips for Lemonade Punch:

• Chill Sprite and pineapple juice before making punch.
• If you don’t have a large drink dispenser, either half this recipe or split it into two pitchers.
• Need a large drink dispenser? Here is one similar to mine.
• You can add in frozen fruit like frozen sliced strawberries or blueberries in the place of ice!

• 1 qt Countrytime lemonade powder
• 1 - 2 L Sprite, refrigerated
• 64 oz pineapple juice, refrigerated
• 1 lemon, sliced

Instructions

1. Add lemonade powder to a large drink dispenser.
2. Slowly pour in pineapple juice and sprite and stir to combine.
3. Add in sliced lemons or use them for garnish on cups.

This cocktail is perfect for those that like that tropical coconut pineapple flavor.  And I’m a total carbonation lover for sure.  So I love the added Sprite in this drink.  

What do you need to make this Blue Breeze Cocktail?

• coconut rum
• blue curacao
• pineapple nectar or pineapple juice
• Sprite

Little Tips for Making this Cocktail:

• Add more or less coconut rum depending on your preference.

• You can use pineapple juice if you cannot find pineapple nectar.  Pineapple nectar is a little more concentrated.  You can find it on the juice isle in cans.

• Feel free to use Diet Sprite as well!  I like to do this in cocktails to save myself a few calories!

Blue Breeze Cocktail

Blue Breeze Cocktail - Transport yourself straight to the beach with this tropical cocktail made with coconut rum, blue curacao, pineapple nectar, and Sprite.

Ingredients

• Ice
• 3 oz of coconut rum (2 shots)
• 2.25 oz of blue curacao (1 1/2 shots)
• 1/3 cup pineapple nectar (found on juice isle)
• 1/3 cup sprite
• Garnish: fresh pineapple slice, maraschino cherries

Instructions

1. Fill a cocktail shaker half way with ice.
2. Add rum, blue curacao, pineapple nectar, and sprite.
3. Stir with long spoon or shake carefully due to carbonation.
4. Pour into two glasses filled with ice and garnish with fresh pineapple and cherry.

Notes

*Add more or less coconut rum depending on your preference.

**You can use pineapple juice if you cannot find pineapple nectar.

***Feel free to use Diet Sprite as well!

I think we could all use a nice cup of this Slow Cooker Hot Chocolate right about now.  I don’t know about y’all, but I’ve never looked so forward to a holiday season.  We all need a little joy and celebration after this year!

And this Slow Cooker Hot Chocolate is so perfect to bring about joy!  Who wouldn’t be happy when they see a big crock pot full of this stuff and all the mix-ins!  

There are a lot of versions of this online.  This one is more of a traditional old-fashioned recipe with evaporated milk and cocoa powder.  It’s the kind of homemade hot chocolate I remember as a child.  It’s perfect when you want to add in all the fun toppings but don’t want it way too sweet.

Slow Cooker Hot Chocolate

Slow Cooker Hot Chocolate - An old-fashioned hot chocolate recipe perfect for the holidays and so easy to make in the slow cooker!

Ingredients

• 2 12 oz. cans of evaporated milk
• 3 cups 2% milk
• 1/2 - 3/4 cup sugar
• 1 cup hot water
• 1/2 cup cocoa powder
• Toppings: canned whipped cream, chocolate chips, marshmallows, crushed peppermint, peppermint sticks or candy canes

Instructions

1. Add evaporated milk and 2% milk to a large microwaveable bowl. Microwave for about 2 to 3 minutes or until hot.
2. Pour milk into slow cooker. Stir in sugar, hot water, and cocoa powder.
3. Cook on high for 2 hours or low for 4 hours.
4. Serve each with optional toppings: marshmallows, crushed peppermint, peppermint sticks, chocolate chips, whipped cream.

This Cranberry Lemonade recipe is perfect for the entire holiday season from Thanksgiving to New Years.  I normally make a big batch of the nonalcoholic version in my drink dispenser when family is over.  It is also perfect when you want to make a few cocktails too!  

I like tart drinks that aren’t too sweet.  If you are like me, then this little recipe is for you!   If you like things sweeter, add a little more sprite.

Tips for Making Cranberry Lemonade:

• Freeze your cranberries ahead of time.
• Refrigerate all drinks ahead of time.
• Slice up lemon into wedges and rings.  I like to have the rings inside the dispenser for a pretty look.

Cranberry Lemonade

Cranberry Lemonade - An easy and refreshing holiday drink recipe.  Both a cocktail for a few and a large batch non-alcoholic punch recipe are included!

Cocktail Recipe:

Toggle ingredient group

• 1.5 oz vodka (1 shot)
• 4.5 oz cranberry juice (3 shots)
• 3 lemon wedges
• 1 cup sprite
• frozen cranberries
• ice

Cranberry Punch (non-alcoholic):

Toggle ingredient group

• 2 liter sprite
• 64 oz cranberry juice
• 6 cups water
• 3 on-the-go lemonade packets (for water bottles)
• sliced lemons
• frozen cranberries

Instructions

Cocktail Version (Makes 3):

Fill a shaker half way with ice. Add 1 shot of vodka (this can be more if you'd like). Add 3 shots of cranberry juice. Squeeze 3 lemon wedges. Fill the rest of the way with sprite. Put on lid and shake to mix. Place frozen cranberries in serving glasses and pour drink into them and serve.

Punch Version (Non-alcoholic):

Fill a large drink dispenser with 2 liters sprite, 64 oz cranberry juice, 6 cups of water, lemonade packets and stir. Add in sliced lemons and some frozen cranberries. Serve with frozen cranberries in glass with a lemon wedge.

Can you tell we are enjoying our summer around here?  On Tuesday, I posted this long-awaited Cilantro Dip, and today I am posting another long-awaited recipe for an Easy Summer Sangria.  This recipe is courtesy of some of my bestest friends in the whole wide world!

This sangria recipe takes me back to our girl trips to the beach.  There is simply no vacation like a our little ladies getaway to the white sandy beaches of Florida and Alabama.  We keep it very simple.  We make this sangria…white one day and red the next.  We bring a book and a beach chair along with a few umbrellas when we need a break from the sun.  We have a great playlist and good company.

We stay out there the entire day because we are not in mom-mode.  It’s the one time of year we can just sit and truly relax.  And when we get back home, we feel refreshed and renewed.  I always feel so blessed to get to go on that trip.

Even if you don’t have a summer beach trip, this Easy Summer Sangria is perfect for a great night of fajitas like we did the other night for dinner.  For a second, I was back on the beach!

Tips for Making Easy Summer Sangria:

• We keep it simple and use one of these containers at the beach.  We shake it up, put it in the cooler and we pour it in our Yeti cups when we are ready.
• Frozen fruit does double duty by keeping your drink cold too.
• Don’t have satsuma rum?  Just use 1/2 cup regular white rum and 1/2 cup triple sec
• Use either chardonnay or red wine like a pinot noir for this recipe.  They are both great!!

Easy Summer Sangria

Prep Time: 5 minutes

Total Time: 5 minutes

Easy Summer Sangria - A super easy sangria recipe perfect for the beach or the pool!  Plus, it can be made with white or red wine!!

Ingredients

• 16 oz frozen mixed fruit (ex: peaches, strawberries, pineapples), plus extra for "ice"
• 2/3 cup sugar
• 3/4 cup warm water
• 1 cup satsuma rum* (see below for substitute)
• 12 oz. chilled sprite
• 1 bottle chardonnay or pinot noir, chilled

Instructions

1. Fill pitcher or container with frozen fruit.
2. In a small bowl, stir sugar and warm water. Add to pitcher.
3. Add in rum, sprite, and chardonnay. Stir to combine well.
4. Refrigerate until ready to serve.

Notes

*Use 1/2 cup white rum and 1/2 cup of triple sec if you don't have satsuma rum.

It’s almost time for the 4th of July, and this Skinny Vodka Lemonade is perfect for the sweltering weather outside.  I’m normally a wine girl lately, but I just can’t drink wine outside when it is hot.  I want something refreshing.

This Skinny Vodka Lemonade is the perfect thirst-quenching drink idea for your next gathering.  I even made it for our neighborhood Bunco game the other night.  I used my big RTIC cup too.

I got the idea from some of my good friends who where always sporting around the little liquid drink enhancers in the purses.  They were trying to skip all the calories when having a cocktail.  That’s when I got the idea to add a little Diet Sprite to mine to make it more like this Electric Lemonade, which I love!  But that requires a simple syrup, and it’s not low calorie.  That Electric Lemonade is perfect for at home where I have the simple syrup made too.  Sometimes, it’s not very convenient to bring that places.  That’s what makes this Skinny Vodka Lemonade perfect.  It’s easy to make anywhere!

Skinny Vodka Lemonade

Yield: 1

Ingredients

• Ice
• Sugar-free lemonade liquid drink enhancer (such as Crystal Light or Mio)
• 1 shot of vodka of your choice (you can use a citrus vodka)
• 1 small can Diet Sprite

Instructions

1. Fill 12 oz cup half way with ice.
2. Put about 2-3 second squirt of sugar-free lemonade.
3. Add one shot of vodka.
4. Fill up the rest of the glass with diet Sprite or diet 7 UP.
5. Garnish with a slice of lemon and serve.

Notes

-For a larger insulated glass, double the recipe.
-Not a lemonade fan? You can use any flavor drink enhancer you like for this drink!

Oh how we love summer around here!  We have been swimming and swimming!  And I’m happy to report that I now have three out of four independent swimmers!  My four year old is doing great in the pool.  In fact the other day, I even sat on the edge of the pool while she swam right by me.  She was super proud!  She is really brave and willingly gets her face wet and swims under water, which I think is the key to a child being a successful swimmer.  If they are not scared to do that, then I find they don’t panic to reach the side.  They just start swimming to get there.

Now I’m still not at the point where I can be very far from her while she swims without floaties.  Honestly, I think she’s good, but I just can’t.  And our little man is happily using his puddle jumper floatie in the water now!  He’s finally out of that stage where he gets stuck on his back and screams because he can’t flip over.  #toddlerswimproblems
So now his cute little move is laying on his back and quickly flipping over with a big smile!  It’s so nice with everyone being so happy in the water.

And if you are looking for a great pool-side drink, this Strawberry Fiesta Daiquiri is it!  It’s kind of like a strawberry pina colada, but is is really creamy with the help of the extra cool whip in there.  It reminds me of a drink I got on our last trip to Jamaica.  The bartender called it a “Jamaican Smiley.”  But the funny thing about that is that it was his own name for that creation.  When I asked another bartender for the drink, he didn’t know what I was talking about.   So I spent the next few days trying to find that same bartender.  And now 10 years later, I have finally made it at home!  Enjoy!

Strawberry Fiesta Daiquiri

Yield: 2 drinks

Prep Time: 5 minutes

Ingredients

• 1 15 oz container strawberries in sugar (frozen)
• 1 cup pina colada mix (bottled)
• 4 oz coconut rum
• 1 cup cool whip
• strawberries to garnish

Instructions

1. Add frozen strawberries, pina colada mix, rum, and cool whip to blender.
2. Mix until blended.
3. Pour into 2 glasses and garnish with strawberries.
4. For non-alcoholic version, just omit the coconut rum.

It’s time to celebrate y’all, and I’ve brought the cocktail!  On Friday my site got a complete overhaul!  It was months in the making.  The fabulous Melissa Rose Design along with Andrea at Nuts & Bolts Media did some beautiful work.  I’m so happy with how it came out.  The best part is that is so much more user-friendly, and you can easily see all my recipes now from my Home page!!

So I’m celebrating over here, and I think I need to make another one of these Electric Lemonade cocktails.
Now you may be a little surprised that I’m posting a cocktail at all.  This is my first one to share with you all.  I don’t drink very much.  Since becoming a mom, it pretty much never happens.  And when I do drink, it might be a glass of wine if my husband and I have a date.

But summer is the perfect time for a fun cocktail like this Electric Lemonade. It’s perfect for sipping by the pool!  I made mine on a Saturday afternoon while we were grilling.  It was kind of nice because I hadn’t done that in a really long time.

Now I made a simple syrup for this drink, which is really easy to make.  It can be the base for many great drinks too!  I’m thinking I’m going to make some mojitos next!

Electric Lemonade

Yield: 1 drink

Ingredients

• Ice
• 1 to 1 1/2 shots simple syrup (see below)
• 1/2 shot blue curacao
• 1 shot Citron vodka
• juice of 1/2 lemon
• 1/2 can sprite

Simple Syrup:

Toggle ingredient group

• 1 cup sugar
• 1 cup water

Instructions

1. Fill a 12 oz. glass half full with ice.
2. Add simple syrup (see below), blue curacao, Citron vodka, lemon juice and Sprite. Stir. Adjust to taste. You may want to add more or less simple syrup and/or Sprite depending on your preference.
3. For simple syrup: Boil 1 cup water and 1 cup of sugar until sugar is dissolved. Let cool.
