One-Pot Beefy Broccoli Rice
If you’re looking for an easy recipe to save your sanity on a busy night, this one-pot dinner is about to become your new go-to. This One-Pot Beefy Broccoli Rice is quick and easy, ready in about 30 minutes, and it’s all made in a single pot, so cleanup is basically nonexistent (my favorite kind of win!).
This one pot dinner has been around a while on my blog, and I always enjoy making this because it’s so easy for weeknight cooking It just involves some ground beef, rice, and broccoli all simmered together in one pot, then it gets topped with a big handful of melty cheese. It’s cheesy, hearty, and exactly the kind of simple dinner idea that you will want on your regular rotation.

6 Qt Dutch Oven
A dutch oven is one of my favorite kitchen items. It’s great for soups, one pot dishes, browning, and sauteing. It goes easily from stove top to oven.
This recipe definitely has some Cajun roots as with many of my recipes. We love our rice dishes, and this one kind of has some rice dressing vibes.


What ingredients are needed for this recipe?
- ground beef (ground round or sirloin works great)
- chopped yellow onion
- finely chopped garlic
- creole seasoning
- warm water
- beef bouillon granules or cubes
- rice – I like to use medium grain
- frozen cut broccoli
- Mild Rotel
- shredded cheddar cheese or Colby Jack
- Optional: fresh parsley

Tips for Making One-Pot Beefy Broccoli Rice
- I only add a half-can of Rotel because I have a few picky eaters. Go ahead and add the whole can if you’d like.
- Use a non-stick pot for easy clean-up.
- There’s no need to cook your rice separately and have another pot to clean either. That, my friends, is a huge bonus! I use medium-grain rice. You may want to increase the cooking time for long grain or brown rice.
- Beef broth can be substituted for water with bouillon granules/cubes.
- I use different cheeses and whatever I have on hand. Colby Jack or Cheddar are usually my go-to cheeses for one-pot meals.


One-Pot Beefy Broccoli Rice
A cheesy, easy one pot dinner filled with ground beef, broccoli, and rice. It's a quick and easy, simple dinner idea that's easy for weeknight cooking.
Ingredients
- 2 lbs. ground beef (ground round or sirloin works great)
- 1 onion, chopped
- 1 clove garlic, finely chopped
- 1 tsp creole seasoning
- 3 cups warm water
- 2 tsp beef bouillon granules or 2 cubes
- 2 cups rice
- 1 lb. frozen cut broccoli
- 1/2 can mild Rotel
- 2 cups shredded cheddar cheese or Colby Jack
- Optional: fresh parsley
Instructions
- Brown beef with onions and garlic. Season with creole seasoning as you start to brown it.
- While meat is browning, mix warm water with bouillon granules and let sit.
- Once beef is browned and onions are clear, add bouillon mixture, rice, broccoli, and Rotel. Stir.
- Bring it to a boil and then cover and reduce heat to low.
- Cook for 20 minutes. Do not lift lid during this time. Stir and check to see if rice is done. If not, add a little more water, cover and cook a little longer.
- Taste and season a little more if you prefer.
- Top with cheese, cover, and let cheese melt. Serve with a little fresh parsley.

Made this tonight in my instant pot! It’s a hit! I wasn’t sure if it would come out in the IP but it worked great! I used all the same measurements as directed in the recipe. But I layered it without mixing in this order. Cooked ground beef on bottom. Then I sprinkled the rice on the meat mixture. Poured the “broth” over the rice. Then the rotel. Then put the broccoli on top. Don’t mix. Cook HP for 10 minutes. Then QR when done! Added cheese after it was plated! Thank you!!

Any suggestions on different seasonings to use if you don’t have creole seasoning on hand?
Hi Melanie, you can certainly use good old salt and pepper with a little bit of garlic powder and onion powder. Creole seasoning has a little touch of red pepper as well.
This was a winner! Even my husband said it had excellent flavor, and he rarely compliments me on anything. 🙄 I used fresh broccoli and added quite a bit more cheese than the recipe called for. I also added salt and pepper. Otherwise I followed the recipe. I expect to add this recipe into my monthly rotation.
D-Doubleicious! I cut it in half, used pace salsa instead of rotel. Used frozen broccoli while coking rice and then 5 minutes before done added about 2 cups of fresh broccoli. Colby jack cheese on top. Really flavorful! Thank you for a really good recipe!
