  • Jiffy cornbread mix
  • egg
  • milk
  • sour cream
  • shredded Colby Jack

It takes minutes to put together, so it is a very easy side dish! I usually have everything to make it too because my people love breakfast sausage. Plus, I keep Jiffy mix on hand all year long for this recipe, which I LOOOOVE!

Jalapeno Sausage Cornbread

Jalapeno Sausage Cornbread - An oldie but a goodie recipe that just screams comfort food! It's perfect as a side for soup during all those cold months!

Ingredients

  • 1 lb. breakfast sausage
  • 1 -8.5 oz box jiffy cornbread mix
  • 1 egg
  • 1/3 cup sour cream
  • 1/3 cup milk
  • 1 cup shredded Colby Jack cheese
  • 2 tbsp pickled sliced jalapenos
  • 2 tbsb jalapeno juice from jar

Instructions

  1. Preheat oven to 350 degrees.
  2. Brown breakfast sausage in a skillet. Remove to a paper towel lined plate.
  3. While sausage is browning, mix cornbread mix, egg, sour cream, and milk in a mixing bowl.
  4. Stir in 1/2 cups shredded cheese, cooked breakfast sausage, jalapenos, and jalapeno juice.
  5. Pour in a sprayed 7 x 10 baking dish.
  6. Bake for 20-25 minutes or until it is golden brown.
