This Monterey Chicken recipe was inspired by one of my favorite dishes at a local restaurant. I always get it, and sometimes I even get it as a sandwich if I’m feeling really hungry! It’s super easy to make at home, and it only takes a few ingredients.

This dinner comes together with only a few ingredients too!

  • thin cut chicken breasts
  • sliced onions
  • colby jack slices
  • your favorite barbecue sauce
  • creole seasoning

Here are my tips for this recipe:

  1. If you can’t find thin cut chicken breasts, just butterfly your chicken breasts by slicing them in half.
  2. Use your favorite barbecue sauce. We love Sweet Baby Rays!
  3. You can even add some cooked bacon with the onions on top of the chicken for even more flavor.
  4. This goes great with any side! I love it with green beans, but you could do salad or even fries!

Easy Monterey Chicken

Yield: 6 servings

Easy Monterey Chicken - An easy five ingredient skillet chicken dinner done in under 30 minutes!

Ingredients

  • 6 thin chicken breasts
  • 2 tsp creole seasoning
  • 1 yellow onion, sliced
  • 6 tbsp barbecue sauce
  • 6 slices Colby Jack cheese

Instructions

  1. Season chicken breasts on both sides with creole seasoning.
  2. In an oven-safe skillet, add olive oil to the pan to heat over medium heat.
  3. Add seasoned chicken breasts and cook on each side for 5 to 7 minutes.
  4. Remove chicken breasts from skillet. Add sliced onions and saute until onions are carmelized about 8-10 minutes. Remove onions from pan.
  5. Add chicken back to pan. Brush with 1 tbsp barbecue sauce on each piece. Top with onions and sliced cheese. Broil until cheese is melted or about 3 minutes and serve with a vegetable or salad.
