Easy Taco Calzones - A quick and easy weeknight dinner idea using refrigerated pizza dough, taco ground beef filling, and cheese! It's a super kid-friendly meal idea!

I’ve updated this Taco Calzone recipe back from 2013.  It’s still a huge winner at our house and perfect for any night of the year!  It only takes a few ingredients too!  I serve it up with a homemade guacamole and sour cream.

Easy Taco Calzones- A quick and easy weeknight dinner idea using refrigerated pizza dough, taco ground beef filling, and cheese! It's a super kid-friendly meal idea!

Original Post:  Having two little ones in school is still pretty new for me.  They are in 1st grade and Kindergarten.  I’m a former teacher, and I get so excited for them as I find out what new things they are learning.  I might be a nerd, but I really enjoy helping them with their homework…for now, of course.
As I’m sure in most of your homes, homework is not just one little worksheet, even for the little ones.  It takes some time.  I’m finding that I don’t have a whole lot of time to cook in the evenings, since we are kind of busy with school stuff and not to mention other activities we have going.  I know…my busy schedule with kids being taken from here to there is only at the beginning!
So this recipe is a result of one of those busy nights.  It was fast, easy, and required only a few ingredients which is pretty much required here lately.
It starts with refrigerated pizza dough, taco seasoned ground beef, and cheese.

Roll it up.

Bake it up.  Super simple!

Taco Calzones

Yield: 4 to 6

Ingredients

  • 1 lb. ground sirloin
  • 1 taco seasoning packet
  • 1 tube of refrigerated pizza dough
  • 1 1/2 cup shredded cheese
  • Optional:  sour cream, guacamole, shredded lettuce, diced tomato

Instructions

  1. Brown ground beef and add taco seasoning packet.  Add the required amount of water according to the seasoning packet and simmer.  Roll out dough, stretching to almost the edges of your pan.  Spread cooked ground beef mixture.  Top with cheese.  Roll up starting from one of the longer ends.    Place seam side down.  Spray a little cooking spray underneath it by carefully moving it around.  Bake at 350 for 20 to 25 minutes or until golden brown.  Slice and serve with sour cream, guacamole, shredded lettuce, diced tomatoes if desired.  Enjoy!

Mmmmm….this looks so yummy! Looks like it would beat Taco Bell hands-down (not that it’s too incredibly difficult to ‘beat’ Taco Bell in the first place…lol)

I’ve made this twice and my family loves it but both times the dough breaks in the middle before I am able to roll it. I think 1 1/2 or 2 packages of pizza dough would hold up better

Hi Gene! So glad you all like it! My husband is not a big bread eater, so he prefers a thinner crust. Sometimes when that happens, I try to “patch” the hole with a thicker piece from the end and it usually helps. Thanks for your tip!

Can this be frozen before baked for another time?

Hi Roxie! I have not tried this because honestly it is so quick and easy already. But I have pre-made taco meat and frozen that. So you could definitely have that part done ahead of time.

We don’t get pizza dough. Can I use bread dough for this recipe

Hi Elaine! You could use bread dough. It will be thicker than the refrigerated pizza crust, but the more bread the better in my opinion 🙂 I have a similar recipe: https://www.diaryofarecipecollector.com/pepperoni-and-cheese-stuffed-bread.html

I made this tonight and it was sooo delicious! I used a little flour on my hands to help with the rolling and had no breakage of dough. Thank you!

The pizza dough seems to thin and stretch worse when you put the hot meet on it next time I will let the meet cool and then put it on the pizza dough.

Be sure to let the taco meat cool a bit before putting it on the dough… I almost couldn’t get mine rolled up because the dough got too sticky quickly since I used meat directly off the burner. It ended up falling part on me haha! Otherwise- SOOOO good!!!
