Pink Sunrise Cocktail – A lovely blend of vodka, aperol, Coco Lopez, pineapple juice, and lime zest! It’s a perfect summer drink!
I love coming back from a trip and recreating something that was a favorite for me. This Pink Sunrise Cocktail was a must for me. I had a cocktail very similar to this one in a moment that was just such a highlight of our recent trip to England.
I had a delicious drink just like this Pink Sunrise Cocktail while sitting in the most quaint, old bar in the middle of Stow on the Wold in the Cotswolds. The bar was at the Old Stocks Inn, and it was one of many we visited on our recent trip! It was such a “pinch me moment.” So from the first moment I tasted this cocktail, I LOVED it and knew I had to try it at home!
And I am so happy to say, I think I nailed it! It is just a perfect summer drink! Here is what you need to make it, and the full recipe is below!
- Aperol
- Vodka
- Coco Lopez (cream of coconut)
- lime zest
- pineapple juice

Pink Sunrise Cocktail
Pink Sunrise Cocktail - A lovely blend of vodka, aperol, Coco Lopez, pineapple juice, and lime zest! It's a perfect summer drink!
Ingredients
- 1.5 oz (1 shot) vodka
- 1.5 oz (1 shot) Aperol
- 1 tbsp Coco Lopez
- 3 oz pineapple juice
- lime zest
Instructions
- Add ice to a cocktail shaker. Add vodka, Aperol, Coco Lopez, and pineapple juice. Place lid onto shaker and shake to mix ingredients.
- Pour through strainer into a small glass. Add a little lime zest to the top and enjoy!
