This is one of those recipes that makes life easier when life is otherwise insane…aka right now in my life.  We have 4 kiddos and they all have things going on, and we basically are in survival mode all week.  So this Instant Pot Salsa Chicken is one of those recipes I can have ready to go for a variety of meals.

What can you make with Instant Pot Salsa Chicken?

Here are a few ideas for your batch of salsa chicken.  I usually get two meals out of one recipe!  

Want to make a smaller batch? Use 3 chicken breasts, a 15 oz salsa, 3/4 cup water, and 1 tsp of creole seasoning. It works out the same!

Instant Pot Salsa Chicken

Cook Time: 30 minutes
Total Time: 30 minutes
Instant Pot Salsa Chicken - This versatile salsa chicken recipe is so quick and easy.  It can be used for enchiladas, tacos, taquitos, and more!  Plus, you can use FROZEN chicken breasts!

Ingredients

  • 5 boneless skinless chicken breasts (can be frozen)
  • 2 cups salsa
  • 3/4 cup water
  • 1 tsp creole seasoning

Instructions

  1. Place chicken in instant pot. Season with creole seasoning.
  2. Mix salsa and water together. Pour over chicken.
  3. Cover with lid and seal valve. Cook on Manual for 20 minutes. If chicken is frozen, cook on manual for 25 minutes. Instant Pot will take about 15 minutes to come to pressure before it starts to count down.
  4. Let it naturally release pressure for about 5 minutes once it is done. Remove lid and shred chicken.
  5. Press off and then saute for about 5 minutes to let shredded chicken sit in sauce some more.
  6. This mixture can be used for enchiladas, tacos, taquitos, etc.
    *This makes enough chicken for a few recipes.

Notes
