I don’t know what has taken me so long to share this easy Baked Enchilada Casserole with you guys!  It’s so delicious and such a crowd pleaser!  It is perfect comfort food for sure!

This recipe has a layer of meat sauce and a layer of refried beans mixed with enchilada sauce in between layers of torn white corn tortillas and shredded cheese. I like to make it with some mexican rice like this recipe here!  Yummo!  Love this dinner!

  • enchilada sauce (medium and mild)
  • green chiles
  • onions

Baked Enchilada Casserole - A total crowd pleasing Mexican casserole recipe filled with layers of white corn tortillas, enchilada sauce, refried beans, meat sauce, and shredded cheese.  Plus, it has a little secret ingredient to give it that great flavor! 

Ingredients

  • 1 lb. ground sirloin
  • 1 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 tsp creole seasoning
  • 2 cloves garlic, minced
  • 10 oz. cream of chicken
  • 1 cup salsa con queso cheese dip
  • 4 oz chopped green chiles
  • 1 packet of taco seasoning
  • 18 white corn tortillas, cut into 2 in pieces
  • 10 oz mild red enchilada sauce
  • 10 oz medium red enchilada sauce
  • 16 oz canned refried beans
  • 4 cups shredded Colby Jack cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large sauce pan, brown ground sirloin with onions and bell pepper, and garlic. Season with 1/2 tsp creole seasoning. Brown until beef is cooked through and onions are clear.
  3. Stir in cream of chicken, green chiles, cheese dip, and taco packet. Let simmer for about 5-7 minutes.
  4. In a bowl, mix 1 can mild enchilada sauce with refried beans until well combined.
  5. Spray 13 x 9 casserole dish. Layer 1/3 of the torn tortillas in the bottom of the dish. Top with refried bean mixture. Top with 1 1/4 cups of cheese. Next layer another 1/3 of tortillas, followed by meat mixture, and 1 1/4 cups of cheese. Top with remaining tortillas. Pour remaining can of enchilada sauce over the top of tortillas. Top with remaining cheese.
  6. Bake for 35 to 45 minutes.
    Optional Toppings: Black olives, chopped cilantro, sour cream.
    Goes great with Mexican rice!
