Easy Weeknight Chicken & Dumplins Recipe – Serious comfort food easy enough for a weeknight dinner!

This Easy Weeknight Chicken and Dumplings is one of the first recipes I learned to make after I got married. It is super easy and perfect for cool nights! Over the years, I have tweaked this recipe and made it perfect for our family. It’s classic comfort food, in my opinion, right up there with Creamy Tomato Basil Soup and Crockpot Sausage & Potatoes.
What ingredients do I need for this Easy Weeknight Chicken & Dumplins?
- chicken breasts
- creole seasoning
- olive oil
- butter
- diced carrots
- diced celery
- diced onion
- bay leaf
- flour
- chicken broth
- baking mix*
- milk
- parsley
- frozen peas

What do you do if you don’t have Baking Mix?
You can definitely make your own! Mix 2 cups flour, 3 tsp baking powder, and 1/2 tsp salt. Using a pastry cutter or a fork, cut in 2 tbsp of butter. Add in 1 tsp dried parsley. Add 3/4 cup milk. Stir to combine. If mixture seems dry add a little milk at a time until it resembles a dough.

Easy Weeknight Chicken & Dumplins

Ingredients
- 3 boneless chicken breasts, cut into 1 inch pieces
- 2 1/2 tsp creole seasoning, divided
- 1 tbsp olive oil
- 2 tbsp butter
- 2 carrots, diced
- 1 onion, chopped
- 1 rib celery, diced
- 1 bay leaf
- 3 tbsp flour
- 1 quart chicken broth
- 1 cup frozen peas
For the dumplings:
- 2 cups bisquick *
- 2/3 cup milk
- 1 tsp dried parsley
Instructions
- Season chicken with 1 1/2 tsp creole seasoning.
- In a large pot over medium high heat, melt butter and olive oil.
- Add onions, carrots, celery, and the bay leaf. Season with 1 tsp of creole seasoning. Stir and cook for about 10 minutes.
- Add flour and stir for 1 minute.
- Add chicken broth and stir. Bring to a boil.
- Add cut up and seasoned chicken. Bring back up to a simmering boil and cook for about 15 minutes stirring occasionally to make sure it doesn't stick.
- While chicken is cooking, make the dumplings by mixing together the bisquik, milk, and parsley.
- Add peas to the mixture and stir.
- Drop heaping tablespoons of dumpling mixture into pot. Do not stir. Place lid on pot. Reduce heat to medium low. Allow it to cook for another 8 to 10 minutes. Soup will thicken.
- Once finished cooking, turn off heat, gently stir and serve.
Notes
If you don't have bisquik or any all-purpose baking mix, you can make your own:
