Crockpot Sausage & Potatoes

This Crockpot Sausage and Potatoes recipe is an easy slow cooker dinner made with smoky sausage, potatoes, and onions. A simple comfort food meal perfect for busy weeknights.

Ingredients

  • 1.5 lbs. smoked pork sausage, sliced
  • 1 large onion, sliced
  • 2.5 lbs. medium russet potatoes, peeled and chopped
  • 1 10 oz. can cream of mushroom soup
  • 3/4 tsp. creole seasoning

Instructions

  1. Spray crockpot with cooking spray unless you use a liner*
  2. Place all ingredients in crockpot. Stir.
  3. Cook on low for 7 to 8 hours.
  4. *Use a slow cooker liner for easy clean up! You can find these with the plastic storage bags in the grocery store.

  1. Has any one tried making this with hash browns? I’m thinking about doing those bulk crock-pot dinners where you prep everything, throw it in a freezer bag and freeze it. I’m thinking I could freeze the sausage, soup, onions and seasoning… then dump that in with a bag of frozen hash browns.

    1. Hi Brenda! I love those dinners that you prep ahead of time too. But honestly, this meal is so simple to throw together in the morning. And I love the idea of hash browns. I think it would totally work, but you may want to reduce the cooking time if not using chopped potatoes.

I get what you’re saying… but I buy in bulk so I have to do a lot of prep before I freeze — we actually have “meat day” where I’m butchering and prepping 20-30 pounds of meats at once..It’s just as easy for me to cut them up and throw the other ingredients in the bag before I freeze. And my husband is a kitchen idiot. Seriously, he would not be able to do this recipe. But if I tell him to dump two bags in the crock pot at noon, he’s good to go 🙂

    1. People have commented that they did that, but it really isn’t necessary. I use a smoked pork sausage, and it turns out great.

    1. Hi Tara! People have commented on using several different kinds of sausage in this recipe over the years. It really boils down to a personal preference and how much of a smoked flavor you prefer. How did it turn out?

  3. Hello, our family has to be gluten free and dairy free for a substitute of the cream of mushroom soup can you use onion soup mix and how much water would you use?

    1. Hi Mindy! I don’t use onion soup mix very often, so I’m not exactly sure on how much water to add. This recipe does not require a lot of water either. I would try adding a cup of water and skip any other seasonings and onions in the original recipe.

  5. Hi! I really want to try this recipe, but I have a serious, it lastly unheard of, intolerance to (most) smoked meat (actually just hickory/hardwood smoked meats as I’m very allergic to hickory trees). Is there another meat I can substitute for it? Thank you for any help you can provide!

        1. @Deni: I’ve done is with spaghetti seasoning and my own mix of oregano, basil, rosemary & thyme. It turns out super if you brush the sausages with OO, roast and brown them in a separate pan while the potatoes are cooking. Then cut them up, throw them in and let the whole thing cook for the remaining time.

  6. Threw this in the crockpot today…came home from my son’s football practice to a fantastic meal! Glad I stumbled upon this recipe! It will become a standard in our house for sure. We ALWAYS have deer sausage on hand, and we grow fresh potatoes as well. Easy enough that my kids (8 & 12) prepped it. I’m thinking I might throw in green beans next time, or maybe carrots., just to have a veggie. Thanks for the recipe!

  7. Have done this 10 different ways and it comes out great every time. Last weekend’s experiment was fingerling potatoes, chourico, onions, peppers and Portuguese “allspice” (cumin, paprika, allspice, chili powder, oregano and a touch of cinnamon). It was awesome!

  8. Made this tonight, OMG it was sooo good! We all had seconds! Didn’t have creole seasoning so I used seasoned salt and rosemary, garlic & sage blend seasonings! Served it with corn and biscuits! Thank you for a very easy, cheap, delicious meal!

    . The house smells wonderful, and it came out great! I have enough for 2 or 3 more meals. I did try it once before, but the sausages turned out horribly. Don’t use the Brown & Serve ones! Next time I make this, I want to add green beans & carrots, make it more like a stew. Thanks for a great recipe!

  12. I made this tonight. I didn’t plan ahead so I ended up making it in the oven in a Dutch oven. I added a can of cream of chicken/mushroom and a can of water. Total cooking time was about an hour. It turned out perfect and my family loved it.

      2. Not sure about the uncooked smoked sausage. Hillshire is the only smoked sausage I’m familiar with.

      1. Hi Carol! Our grocery stores carry smoked sausage of different varieties behind the meat counter. You can certainly use Hillshire farm. Yes, you can cook this on the stove. I would brown the sausage, add the potatoes and brown a little longer with the potatoes (about 10 minutes). Add onions and about 1 to 1/2 cups of water and seasoning. Let it come to a boil, reduce heat to simmer and cover. Let it simmer until potatoes and and onions are cooked and it is thicker adding more water if necessary. Stir in cream of mushroom and taste to season.

  13. Try it with Campbell’s Cream of Chicken with Herbs soup. I use 2 cans, and for the potatoes, I leave the skins on. When I take it for lunch & heat it in the microwave, the extra soup becomes gravy or sauce. MMMMM!!
