Turkey, Mozzarella, and Roasted Red Bell Pepper Paninis

 These are super yummy and super simple!  You don’t even need a fancy panini press.  They are my FAVORITE sandwich to make when I craving a soup and sandwich kind of supper.

Don’t be scared of the roasted red bell peppers on your sandwich!  I’m not much for peppers or pickles, but you cannot have this sandwich without them! They make it so GOOD!

No need for a fancy panini press…just use canned goods, a tea kettle filled with water, or your hand to weight down a skillet on top of the panini.  This was one of the first Rachael Ray tricks I learned!

Recipe: 
Adapted from:  Rachael Ray

1 Italian loaf (from bakery section)
Roasted red bell pepper strips
sliced mozzarella 
1 package thinly sliced ham
1 package thinly sliced turkey
desired condiments (mayo, mustard, spicy mustard, etc.)
olive oil

Slice Italian loaf in 1 in slices.  Spread each slice with condiments of your choice.  We just use mayo and mustard.  Pile sandwich with turkey and ham.  Lay slice of mozzarella followed by two or three strips of roasted red bell peppers.  Top with other slice of bread.  Brush olive oil on each side of bread.  Place in skillet over medium heat.  Press down on sandwich with another skillet using any of the methods mentioned above.  When it is golden brown, flip it over and finish cooking the other side pressing it down as it cooks.  Slice in half to serve.  This sandwich goes really well with Tomato Soup.

    Maybe the peppers go nice and sweet once they are roasted and act like a pickle or relish anyway?
