Mississippi Mud Pie
Mississippi Mud Pie – A wonderful fudge pie layer on top of a homemade chocolate graham cracker pecan crust and topped off with a homemade whipped cream, chocolate syrup, and pecans.I’ve been a pie baking machine lately! This Mississippi Mud Pie is another great one you might want to try this holiday. I think it is my favorite of the last three I’ve posted! I adapted this one from Food Network Magazine’s November 2012 issue. The best part about it…it’s easy!

Mississippi Mud Pie
Ingredients
Crust:
- 11 chocolate graham crackers
- 1/3 cup pecans
- 4 tbsp unsalted butter, melted
Filling:
- 1/2 tbsp espresso powder
- 3/4 cup water
- 1 stick unsalted butter
- 2 oz. unsweetened chocolate
- 2 tbsp flour
- pinch of salt
- 1 1/4 cup sugar
- 2 tbsp light corn syrup
- 1 1/2 tsp vanilla
- 3 large eggs
Topping:
- 1 1/2 cups cold heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla
- 2 tbsb chopped pecans
- Chocolate syrup, for drizzling
Instructions
- Preheat oven to 375.
- Pulse graham crackers and pecans in food processor until finely ground. Pour into a bowl, reserving 2 tbsp for topping. Mix crumbs with melted butter and press into pie dish. Bake until set for 10 to 12 minutes.
- To make the filling, heat the water in the microwave for 2 minutes. Remove and add the espresso powder stirring to dissolve. Set aside.
- Melt butter in saucepan over medium heat. Stir in chocolate until melted. Remove from heat and stir in salt and flour until smooth. Stir in sugar, corn syrup, 2 tbsp of espresso liquid, and vanilla. Add eggs one at a time stirring until smooth.
- Pour filling into pie crust and bake for about 30 minutes or until it starts to crack on top. Let cool on wire rack for 2 hours.
- After cooling, make the topping by mixing the heavy cream, powdered sugar, and vanilla with a mixer until soft peaks form. Top pie with whipped cream and sprinkle with reserved graham cracker crumbs, more pecans, and chocolate syrup.
