These are so good! They make a great lunch or a cute little appetizer. Start off with a loaf of focaccia bread.
Scramble a few eggs with a little heavy cream, salt, and pepper.
Melt some butter in a non-stick pan making sure it evenly coats.
Pour in the egg mixture, really swirling it around to make the egg crepe as thin as possible.
Put a lid over it for about 30 seconds to a minute to let it cook a little more.
Carefully flip it over and cook a few more seconds.
Split and toast the bread. You are making one big sandwich.
Spread your favorite condiments. My kiddos don’t like mustard so I didn’t put it on their side.
Layer with your egg crepe…
turkey…
ham (only on one side for us…kids’ request)
bacon…(I cooked it in the oven at 400 degrees for about 15 to 20 minutes using that awesome basket-weaving trick I saw on Pinterest)
pepperjack or american cheese or provolone…
put it under the broiler a few minutes to melt the cheese…
Top and slice into cute little mini sandwiches…

1 focaccia loaf, split and toasted
2 tablespoons of butter
2 eggs
2 tablespoons heavy cream
salt and pepper
6-8 slices of bacon
turkey and/or ham
4 slices of pepperjack, provolone, or american cheese
mayo and/or mustard of your choice
toothpicks (optional)
Begin by cooking bacon in a 400 degree oven for 15 to 20 minutes until browned. Mix eggs with heavy cream and salt and pepper. Melt 2 tbsp of butter in a non-stick skillet making sure to swirl it around to coat the bottom. Pour in egg mixture swirling it around the pan to try to get the egg crepe as thin as possible. Put a lid on it for about 30 seconds to a minute to allow it to cook the top a little more. Carefully flip it and cook a few more seconds. Spread both sides of the toasted focaccia with mayo and/or mustard. Top the bottom slice of focaccia with the egg crepe, turkey and/or ham, bacon, and cheese. Place under broiler a few minutes to melt the cheese. Top with other side of bread and slice.
