<p style="text-align: center;">So I have Bobby Flay&#8217;s Burgers, Fries, and Shakes cookbook, which I absolutely love!!  Every burger I&#8217;ve made has been a winner.  Yes, some of the ingredient lists may be a little long or include hard to find items, so I do have to do some tweaking to make them work.  However, they still come out super delicious and so gourmet!!</p>
<p style="text-align: center;">They are just so much fun to make on a Friday or Saturday night!</p>
<p style="text-align: center;">His recipes always include wonderful sauces and finishing touches.  They are so worth the extra step!!  For this aioli sauce, I replaced Piquillo peppers with Pepperocini peppers.  I also used regular smoked paprika instead of smoked Spanish paprika.<br />
For the cheese, you can use pepperjack instead of Manchego (We tried both and liked them equally).<br />
For the ham, you can use regular thinly sliced smoked ham instead of Serrano ham.</p>

							1/2 cup mayo						</li>

							2 cloves garlic, chopped or 1 tsp jarred minced garlic						</li>
												<li data-ingredient-index="3" data-ingredient-id="635">
							2 tbsp Pepperocini peppers						</li>
												<li data-ingredient-index="4" data-ingredient-id="636">
							1 tsp smoked Paprika						</li>
												<li data-ingredient-index="5" data-ingredient-id="637">
							1/2 tsp Kosher salt						</li>
												<li data-ingredient-index="6" data-ingredient-id="638">
							For the burgers:						</li>
												<li data-ingredient-index="7" data-ingredient-id="639">
							1 1/2 lb. ground beef (80/20)						</li>
												<li data-ingredient-index="8" data-ingredient-id="640">
							Kosher salt and pepper						</li>
												<li data-ingredient-index="9" data-ingredient-id="641">
							3 tbsp canola oil						</li>
												<li data-ingredient-index="10" data-ingredient-id="642">
							4 sesame seed hamburger buns, toasted						</li>
												<li data-ingredient-index="11" data-ingredient-id="643">
							4 slices of Manchego cheese or pepperjack						</li>
												<li data-ingredient-index="12" data-ingredient-id="644">
							8 slices of Serrano ham or smoked ham						</li>
										</ul>

		<h2 class="mv-create-instructions-title mv-create-title-secondary">Instructions</h2>
		<ol><li data-step-index="0" id="mv_create_62_1">Make the aioli: Mix the mayo, garlic, peppers, paprika, and salt in a food processor. Cover and refrigerate for at least 30 minutes.</li><li data-step-index="1" id="mv_create_62_2">Make 4 hamburger patties about 3/4 in. thick. Make a deep depression in the center with your thumb. Season with salt and pepper on both sides. Use 1 1/2 tbsp of canola oil to brush on both sides of patties. Grill the burgers over medium high heat until golden brown and slightly charred for about 5 minutes on the first side. Flip and grill on the other side for another 5 minutes or until desired doneness.</li><li data-step-index="2" id="mv_create_62_3">Assemble the burgers: Spread the bottom and top bun with aioli sauce. Top with a slice of cheese and a 2 slices of ham. Top with burger, another slice of cheese and 2 more slices of ham. Finally top with bun.</li><li data-step-index="3" id="mv_create_62_4">Brush bottom and top buns with olive oil. Place in pan over medium high heat. Press down on burger and grill until golden brown. I used another smaller skillet to help flatten bun. Flip and grill until the other side is golden brown and the cheese is melted. Serve while hot.</li></ol>	</div>

							1 tsp paprika (Smoked Paprika if you have it)						</li>

							1/4 tsp cumin						</li>

							1/2 tsp cayenne pepper						</li>

							1 stick butter						</li>

		<ol><li data-step-index="0" id="mv_create_47_1">Heat the oil in saute pan until really hot.</li><li data-step-index="1" id="mv_create_47_2">Add onion and saute for 2 to 3 minutes, or until soft.</li><li data-step-index="2" id="mv_create_47_3">Add the garlic and cook for 30 seconds.</li><li data-step-index="3" id="mv_create_47_4">Add the chili powder, cumin, cayenne, and paprika.</li><li data-step-index="4" id="mv_create_47_5">Stir and cook for a minute.</li><li data-step-index="5" id="mv_create_47_6">Add the water and cook until the mixture becomes thickened and the water reduces.</li><li data-step-index="6" id="mv_create_47_7">Let it cool slightly.</li><li data-step-index="7" id="mv_create_47_8">Place the butter in a food processor, and add the onion mixture (Bobby's original recipe called for 1 1/2 sticks of butter, so I added all the onion mixture but about a tablespoon). &nbsp;Process the mixture until smooth.</li><li data-step-index="8" id="mv_create_47_9">Season with salt and pepper to taste.</li><li data-step-index="9" id="mv_create_47_10">For the corn: &nbsp;Remove all the husks and silk.</li><li data-step-index="10" id="mv_create_47_11">On a sheet of heavy-duty aluminum foil, slather the each corn with the butter mixture. &nbsp;Wrap tightly in foil. &nbsp;Repeat with rest of corn.</li><li data-step-index="11" id="mv_create_47_12">Place on gas grill over medium heat for about 20 minutes. &nbsp;Let rest a few minutes. &nbsp;Serve with more butter if desired.</li></ol>	</div>

<div>Let&#8217;s just say I&#8217;m a bit obsessed with Bobby Flay recipes lately!  I think I&#8217;ve posted four in the past few weeks!  What can I say?  His grilling recipes are great for this time of year.</div>

<div>These burgers are super simple to prepare (which is not always the case with his recipes).  This recipe comes from his Burgers, Fries, and Shakes cookbook.</div>
<div></div>
<div>As I flipped through the cookbook, I had trouble deciding which burger to cook.  At my husband&#8217;s request, this was the winner&#8230;and a WINNER it was!  He LOVED it!  Now be prepared for garlic breath, but if you both have it, who cares!</div>
<div></div>
<div>Recipe:</div>
<div><i>Source-Bobby Flay</i></div>
<div><i> </i></div>
<div>1 1/2 sticks unsalted butter, softened</div>
<div>4 cloves garlic</div>
<div>1/2 shallot, chopped</div>
<div>3 tbsp fresh parsley</div>
<div>salt and pepper</div>
<div>1 1/2 lbs. ground chuck (80/20)</div>
<div>1 1/2 tbsp canola oil</div>
<div>4 hamburger buns</div>
<div></div>
<div>In a food processor, combine butter, garlic, shallot, and parsley.  Season with salt and pepper.  Scrape into some plastic wrap.  Roll it up into a log.  Refrigerate the butter mixture for at least 30 minutes to marry the flavors.</div>
<div></div>
<div>Season ground beef with salt and pepper.  Form into 4 patties.  Make a depression in the center with your thumb.  Brush burgers with canola oil before placing on the grill.</div>
<div></div>
<div>Grill burgers over medium high to high heat for about 4-5 minutes, or until slightly charred and browned, then flip.  Grill for another 4-5 minutes.  If you like your burgers really well done, then add a few minutes cooking time.  As burgers are cooking, brush with melted garlic butter every 30 seconds.</div>
<div></div>
<div>Spread buns with more of the garlic butter and grill for a few minutes, or until golden brown.  Top burgers with lettuce, tomato, and your favorite condiments.</div>
<div></div>
<div>*We used the left over garlic butter, the next night on our steaks.  They were really good too!</div>

<div>This homemade shake was soooo good!  My kids loved it!  I made the simple fruit base in the afternoon, chilled it, and after supper we made our shakes.  They are super easy.  The recipe comes from Bobby&#8217;s Burger Palace ( a Bobby Flay restaurant).</div>

<div>Recipe:  <i>Adapted from Bobby Flay&#8217;s Burgers, Fries, and Shakes (such an awesome cookbook)</i></div>

<div>Begin by making the strawberry fruit base:</div>
<div>-1 pound fresh strawberries (hulled)</div>
<div>-3 to 6 tbsp of sugar depending on the sweetness of the berries</div>
<div>-3 tbsp of strawberry jam</div>
<div>-juice of half a lemon</div>
<div></div>
<div>Mix berries with 3 tbsp of sugar.  Let sit at room temperature for 30 minutes.</div>
<div>In a small saucepan, mix berries and jam.  Cook over medium-high heat for about 5 minutes.  Begin mashing and cooking berries for another 15 minutes.  Remove from heat and add lemon juice.  Taste and add more sugar if needed.<i>(I only used 3 tbsp-the actual recipe calls for 4 to 6). </i> Transfer to a bowl and allow to cool.  Cover and refrigerate for 2 hours to 24 hours.  Can be frozen in portions for up to 6 months.  Defrost in refrigerator overnight before using.</div>
<div>*We used half of it one night and the other half the next night because they were so good!</div>

<div>For shakes:</div>
<div>1/2-3/4 cup milk</div>
<div>1/2 cup strawberry fruit base</div>
<div>10 oz. premium vanilla ice cream (We actually just filled the blender a little over half-way with ice cream).</div>
<div>Fresh whipped cream</div>
<div></div>
<div>Combine all of the ingredients beginning with 1/2 cup milk.  Add more milk depending on how thick you like your shakes.  Pour in a glass and top with whipped cream.  Enjoy!</div>

<div>Fresh Whipped Cream:</div>
<div>1 cup heavy whipping cream</div>
<div>2 tbsp sugar</div>
<div>1/2 tsp vanilla extract</div>
<div></div>
<div>Beat cream, sugar, and vanilla until soft peaks form.  Store in refrigerator.</div>

<div style="text-align: center;">Here&#8217;s another great Saturday night grilling recipe!  These are yummo!  They are great for having a couple of friends over too!  They come from Bobby Flay&#8217;s Boy Gets Grill cookbook.  Last week I shared his <a href="https://diaryofarecipecollector.blogspot.com/2013/05/personal-grilled-pizzas-with-grilled.html">Grilled Pizzas</a>, which are another great Saturday night grilling meal.</div>

<div style="text-align: center;">Now onto a lot of photos, but they will make the stacking and layering easy to see.  These are not your average quesadillas!  They are double-stacked!  Needless to say, they are VERY filling.  I had trouble eating a whole one, and I promise I can eat some quesadillas!</div>

<div>Recipe:  <i>Adapted from Bobby Flay&#8217;s Boy Gets Grill</i></div>
<div>3 ears corn, husked and kernals removed</div>
<div>12-6 in flour tortillas</div>
<div>2 cups Monterrey Jack cheese, shredded</div>
<div>1 cup sharp white cheddar cheese, shredded</div>
<div>1 sweet yellow onion, thinly sliced</div>
<div>2 tbsp thyme</div>
<div>salt and pepper</div>
<div>olive oil</div>
<div>20 large shrimp, shelled and deveined</div>
<div>jalapeno pesto, recipe below</div>

<div>1.  Heat grill to medium heat.  Season shrimp with salt and pepper and place on skewers.  Brush each side of shrimp with olive oil.  Grill for about 2-3 minutes on each side or just until pink and a little charred.</div>
<div>2.  Grease a flat sheet pan (preferably one with no sides) with olive oil.  Arrange 4 tortillas on the pan, rubbing around on the oil a little.  Put a little corn, onions, cheeses, and 3 shrimp on each.  Top each with another tortilla.  Add more corn, onions, cheeses, and 2 more shrimp.  Finally top with third tortilla. Brush top tortilla with olive oil.</div>
<div>3.  Carefully slide tortillas off of pan onto grill (medium heat).  Cook for about 2 minutes on each side, carefully turning as in the above pictures.  Remove from heat and cut into quarters.  Serve with jalapeno pesto.</div>

<div>Jalapeno Pesto:</div>
<div>2 jalapenos, roasted, peeled, and seeded</div>
<div>1 cup fresh cilantro</div>
<div>1 clove, garlic</div>
<div>2 tbsp pine nuts or pecans*</div>
<div>1/4 cup olive oil</div>
<div>salt and pepper</div>
<div></div>
<div>Combine first four ingredients in a food processor, adding the oil with the motor running.  Season with salt and pepper.  This can be made ahead of time and is so worth the extra step!</div>
<div>*I&#8217;m severely allergic to peanuts, so I have to be careful with other nuts as well.  I use pecans because I know I can have them.</div>

<div>NOTE:  We roasted the jalapenos before we got started with the other stuff.  Just rotate them over medium-high heat on the grill until charred.  Remove and place directly in a ziploc bag to steam for about 10 minutes.  Remove from bag and peel charred skin.  Slice pepper open and cut out seeds.</div>

<div>These personal pizzas are great for a Saturday night! Prepare your dough in the early afternoon and it will be ready to go to the grill later that evening. Get all your peppers and onions chopped and cheese shredded early too, and it will make the evening even more relaxing.</div>

<div>My friend Julia introduced me to these a few years ago.  I had never grilled a pizza before, but it is the easiest darn thing to do.  In bigger cities, you can find pre-made pizza dough to use too.  I usually end up making mine because it is not that available where I live.  Using my stand mixer, pizza dough is really simple.</div>
<div></div>
<div>For the PIZZAS:</div>
<div><i>Recipe adapted from Bobby Flay&#8217;s Boy Gets Grill cookbook</i></div>
<div>1 package of pepperoni</div>
<div>2 red onions, sliced into 1/2 in. rings</div>
<div>2 large red bell peppers, quartered and seeded</div>
<div>2 large yellow bell peppers, quartered and seeded</div>
<div>olive oil</div>
<div>salt and pepper</div>
<div>pizza dough, see below for a recipe if you want to make your own</div>
<div>1/2 lb. shredded fontina cheese (wonderful, creamy, melty cheese)</div>
<div>1 cup ricotta</div>
<div>2 tbsp olive oil, plus more for grilling</div>
<div>2 tbsp fresh oregano or 1 tsp dried oregano</div>
<div>Basil Vinaigrette, recipe below**</div>

<div>Brush the onions and peppers with olive oil and sprinkle with salt and pepper. Grill until soft and slightly charred, about 4 to 5 minutes per side.  Remove and roughly chop for topping pizzas.</p>

<div>Heat grill to high.  Split dough into 4 equal portions.  On a floured surface, roll and stretch out for individual pizzas.  These are very rustic, don&#8217;t worry if they are not round.  Brush sides of dough with olive oil and sprinkle one side with salt and pepper.  Quickly and carefully transfer them to grill.  Grill 2 to 3 minutes until golden and flip and grill another 1 or 2 minutes.</p>

<div>Create your pizzas:  I sprinkle a little cheese then add pepperoni, grilled veggies, a little more pepperoni, and top with more cheese.  At this point you can put them on a baking sheet and finish off on the grill or in a 450 degree oven until the cheese has melted.</div>
<div>While you wait, mix up ricotta with olive oil and oregano.  Place a few dollops of this on pizzas as they come out the oven.  Drizzle with Basil Vinaigrette.  Slice and serve.</div>

<div>Basil Vinaigrette:</div>
<div>1/2 cup fresh basil leaves</div>
<div>1/4 cup white wine vinegar</div>
<div>1 tbsp sugar</div>
<div>salt and pepper</div>
<div>1/2 cup olive oil</div>

<div>Combine all in a blender.  Pulse until smooth.  Adjust seasonings with salt and pepper.</div>

<p>For the DOUGH:<br />
<i>Recipe adapted from Food Network Magazine</i><br />
1 tbsp sugar<br />
1 1/4 oz packet of active yeast<br />
3 tbsp olive oil, plus more for brushing<br />
3 3/4 cup all-purpose flour, plus more for dusting<br />
1 1/2 tsp salt</p>
<p>In the bowl of a stand mixer, mix 1 1/3 cups of warm water (105 degrees) and sugar.  Stir in the yeast and let set about 10 minutes.  It will be foamy when done.  Stir in olive oil.  Whisk the flour and salt together in a separate bowl.  Slowly add the flour mixture to the yeast mixture, turning on the mixer after each addition.  (I use my dough hook the entire time).  It may be necessary to scrape the sides occasionally.  Continue mixing with dough hook for about 10 minutes on medium speed.  Dough will pull from the sides of bowl when it is ready.  Transfer to a bowl coated in a little olive oil.  Sometimes it helps to sprinkle a little extra flour on your hands and on the dough to get it out of the bowl.  Brush dough with olive oil once in bowl.  Cover with dish towel and set in a warm place.  Let it rise for about 1 1/2 or 2 hours.  SERIOUSLY&#8230;pizza dough is so easy to make!</p>
