Hi Rebecca! You might have cooked the marshmallow mixture a little too long. The longer sugar cooks, the more like toffee it becomes. If you felt that you didn’t have enough coating on the cereal, then yes I would increase the marshmallow mixture by half.

Great alternative since my child is allergic to peanut and most cereal bars call for peanut butter. Only thing though, my bars were a bit too hard after cooling off. Any way to make them a bit softer? Maybe I didn’t use enough of the butter/marshmallows mixture… Thank you for the recipe! 🙂

But what else could I dip them in. Hubby doesn’t like chocolate on things like this and DS doesn’t hardly like chocolate at all. Or maybe just not dip them??? I haven’t tried these protein cheerio’s but they look really good. I will have to look for them for sure now. You are so right, school started earlier and earlier each year. I guess if they are getting out in May it is worth it, but August just seems like it should be the last days of summer and school shouldn’t be starting. lol Thanks Jaren!
