Hi Debra!  That&#039;s a great question.  I also love making and freezing breakfast burritos.  I have not actually tested out a breakfast casserole in the freezer however.  What you and I could both try is just making this for a good weekend breakfast (or even a breakfast supper idea) and then freezing any leftovers and see how it holds up.
