Looks like a great recipe and I’m going to try it…however…”Rotel” is not a product, it’s a brand name of a company that makes several products so you left some guessing in here.

In reply to R. Davis. Hi Regina! I'm so glad you liked it too! Most of the time I buy the Mild Rotel because the regular is a little too spicy in certain dishes. It gives that little kick but not too much. Thanks for letting me know how you liked it!

The One pot Cajun Rice & Black Eyed peas was awesome! It was very easy to make and my family loved the meal. My family said this is a “Keeper” recipe. I made it with diced tomatoes because I thought the Rotel would be too spicy. I ended up adding diced jalapeños…. Next time I will stick to the recipe and use the Rotel. Thank you for sharing yummy and easy recipes….
