I love a good mini muffin recipe! They are perfect for breakfast or a nice little sweet snack after dinner. These Cinnamon Sugar Apple Muffins make a great comforting treat this fall! They are super moist with the help of shredded apple added to the batter and taste like Fall y’all! And I love a good seasonal treat baking away making my whole home feel and smell all cozy! Who needs a fall candle? Just make these muffins!

They are super easy to make! No need for a mixer or anything because they are easy to stir together in a bowl and scoop out into a mini muffin tin. Then they are finished off by dipping in a little melted butter and cinnamon and sugar! Yummo! Grab a cup of coffee and enjoy on a crisp fall day! I certainly can’t wait for that!

They only take a few ingredients to make too! So EASY!!

Cinnamon Sugar Apple Muffins

Yield: 30 mini muffins

Cinnamon Sugar Apple Muffins - These mini muffins make the perfect little fall muffin and pack a great apple flavor with a cinnamon sugar punch!

Ingredients

• 1 box spice cake mix
• 1 1/2 cups applesauce (original)
• 2 eggs
• 1 medium granny smith apple, shredded (about 3/4 to 1 cup)
• 1 1/2 sticks butter
• 2 cups sugar
• 2 1/2 tsp cinnamon

Instructions

1. In a large bowl, stir together cake mix, apple sauce, eggs, and shredded apple.
2. Spray a mini muffin tin with cooking oil spray.
3. Fill each muffin tin with batter 3/4 full.
4. Bake at 350 degrees for about 10 to 12 minutes.
5. Once muffins are finished baking, melt butter and allow to cool a few minutes.
6. Stir together sugar and cinnamon.
7. Dip each muffin in butter and then cinnamon and sugar. Place on a serving plate.

Okay folks, I had to make a pumpkin recipe. It may be a 100 degrees outside, but I’m ready for Fall. Aren’t we all? And there is nothing more fall than a pumpkin dessert baking away and making your house smell all cozy! This Easy Pumpkin Skillet Coffee Cake did not disappoint!

If you’ve been around on my site for a while, then you know I have a love for my cast iron skillet. I have several sweet and savory skillet recipes!

What do you need to make Pumpkin Skillet Cake?

• all purpose flour
• granulated sugar
• baking soda
• baking powder
• kosher salt
• cinnamon
• pumpkin pie spice
• vegetable oil
• pumpkin puree (canned)
• sour cream
• eggs
• brown sugar
• chopped pecans
• powdered sugar
• vanilla extract
• milk

What are the steps for making this Pumpkin Coffee Cake?

• Mix dry ingredients in a large bowl.
• Add in oil, pumpkin, eggs, and sour cream.
• Pour into greased 10 inch cast iron skillet.
• Make the brown sugar/pecan topping and sprinkle and swirl throughout the batter.
• While it bakes, make the glaze by whisking together powdered sugar, vanilla, and milk.
• Pour over warm cake. Allow to cool for about 10 minutes before slicing.

Can this recipe be made without a cast iron skillet?

• Yes, you can make it in a smaller baking dish such as a 7 x 10 inch dish. Baking time will vary. The more spread out the batter, the less time it needs to make. Generally, wait for it to mostly set in the middle before removing from oven.

Easy Pumpkin Skillet Coffee Cake - An easy pumpkin recipe perfect for fall. It comes together in one bowl and then it's topped with a sugared pecan topping and an easy glaze.

Ingredients

• 2 cups all purpose flour
• 1 cup granulated sugar
• 1 tsp baking soda
• 2 tsp baking powder
• 1/2 tsp kosher salt
• 1 tsp cinnamon
• 1 tsp pumpkin pie spice
• 1/2 cup vegetable oil
• 1 cup pumpkin puree (canned)
• 1/2 cup sour cream
• 2 eggs
• 1/2 cup brown sugar
• 1/4 cup chopped pecans

Glaze:

Toggle ingredient group

• 1 cup powdered sugar
• 1 tsp vanilla extract
• 2 tbsp milk

Instructions

1. Preheat oven to 350 degrees.
2. In a large mixing bowl, add flour, granulated sugar, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice. Mix together.
3. Add in oil, pumpkin, eggs, and sour cream. Stir until combined.
4. Pour into greased 10 inch cast iron skillet.
5. Mix together brown sugar and pecans. Sprinkle over the top of batter. Use a knife to swirl mixture around really well.
6. Bake at 350 for about 25 to 30 minutes.
7. Once you remove from the oven, make the glaze by whisking together powdered sugar, vanilla, and milk. Pour over warm cake.
8. Allow to cool for about 10 minutes before slicing.

Okay, so this list of my Top 5 Fall Desserts was hard to make!  It’s like choosing among children.  It’s hard to leave any of them out.  But, I had to stay on task with the assignment and pick my true top 5 for fall.  So here they are!

This Pumpkin Praline Trifle is a definite show-stopper dessert!  It’s layers of pumpkin cake with a cream cheese pudding, caramel, and praline pecans!  Basically, heaven in a bowl!  I’ll never forget the first year I made it I was so excited!  I had made it the day before Thanksgiving, and the next day I had a terrible cold.  I couldn’t even taste it, and I was so upset!!  Need a good trifle dish?  Here is a good one.

This Grandgirl’s Apple Cake is by far one of THE BEST DESSERTS IN MY LIFE!  If those words and all caps is not convincing enough, let me just tell you that it soaks in a buttermilk glaze for an hour before flipping it out.  I even have an Instagram Reel here!!!

This Chocolate Dream Trifle is a chocolate lover’s dream!!  It’s layers of chocolate cake, chocolate mousse, and chocolate ganache!  See why chocolate lovers will like it?  I mean I think I need to go make this again now!  Trifle Bowl Here!

This Pumpkin Toffee Poke Cake is the answer to those who aren’t really into pumpkin pie.  It’s a yummy pumpkin cake with sweetened condensed milk soaked in and toffee topped!  I mean so good!!!

Finally, another trifle…shocker!  I just think they make such beautiful desserts for the occasion!  This is the Chocolate Praline Trifle.  It’s chocolate cake with praline pecans baked into the bottom.  Then it’s crumbled up and layered with homemade whipped cream!  So good!

This Cranberry Lemonade recipe is perfect for the entire holiday season from Thanksgiving to New Years.  I normally make a big batch of the nonalcoholic version in my drink dispenser when family is over.  It is also perfect when you want to make a few cocktails too!  

I like tart drinks that aren’t too sweet.  If you are like me, then this little recipe is for you!   If you like things sweeter, add a little more sprite.

Tips for Making Cranberry Lemonade:

• Freeze your cranberries ahead of time.
• Refrigerate all drinks ahead of time.
• Slice up lemon into wedges and rings.  I like to have the rings inside the dispenser for a pretty look.

Cranberry Lemonade

Cranberry Lemonade - An easy and refreshing holiday drink recipe.  Both a cocktail for a few and a large batch non-alcoholic punch recipe are included!

Ingredients

Cocktail Recipe:

Toggle ingredient group

• 1.5 oz vodka (1 shot)
• 4.5 oz cranberry juice (3 shots)
• 3 lemon wedges
• 1 cup sprite
• frozen cranberries
• ice

Cranberry Punch (non-alcoholic):

Toggle ingredient group

• 2 liter sprite
• 64 oz cranberry juice
• 6 cups water
• 3 on-the-go lemonade packets (for water bottles)
• sliced lemons
• frozen cranberries

Instructions

Cocktail Version (Makes 3):

Fill a shaker half way with ice. Add 1 shot of vodka (this can be more if you'd like). Add 3 shots of cranberry juice. Squeeze 3 lemon wedges. Fill the rest of the way with sprite. Put on lid and shake to mix. Place frozen cranberries in serving glasses and pour drink into them and serve.

Punch Version (Non-alcoholic):

Fill a large drink dispenser with 2 liters sprite, 64 oz cranberry juice, 6 cups of water, lemonade packets and stir. Add in sliced lemons and some frozen cranberries. Serve with frozen cranberries in glass with a lemon wedge.

Oh my goodness!  This Overnight Slow Cooker Apple Cinnamon Oatmeal recipe is seriously going down as one of my favorites folks.  I was giddy with how delicious it came out!  I’m dreaming of making it again soon as I type this post for you guys!

How great is waking up to breakfast already made?!!  It’s FABULOUS!  I felt so accomplished which is exactly what I need in life right now since we are FINALLY back to school.

Let’s talk about how good it was.  If you haven’t tried steel cut oats, let this recipe be your reason to try them.  They make a huge difference and the oatmeal is so creamy!  I love topping each portion with a little more brown sugar, sliced almonds for crunch, and a little milk.  

Overnight Slow Cooker Apple Cinnamon Oatmeal

Overnight Slow Cooker Apple Cinnamon Oatmeal - A creamy easy make-ahead breakfast oatmeal recipe.

Ingredients

• 2 cups steel cut oats
• 2 large granny smith apples, peeled and diced (about 3 cups)
• 1/2 cup brown sugar
• 1 tsp cinnamon
• 1 tsp kosher salt
• 1 tbsp vanilla
• 3 tbsp butter, cubed
• 8 cups water
• Toppings: sliced almonds, brown sugar, milk

Instructions

1. In a slow cooker, mix steel cut oats, apples, brown sugar, cinnamon, salt, vanilla, and water.
2. Top with cubed butter.
3. Cook on low for 8 hours.
4. Once ready, stir well and scoop into serving bowls. Top each with about 1 tbsp of brown sugar, sliced almonds and a little milk.

These Apple Butter Cinnamon Swirl Cookies are the perfect cookie with a cup of coffee!  I may have enjoyed a few for breakfast too.  

They start with such an easy cookie dough recipe too!  All you do for the filling is mix up some jarred apple butter with a little cinnamon and brown sugar.  My kids love any kind of recipe that requires a rolling pin too.  We just roll it into a big rectangle and spread on the filling and sprinkle on the pecans.

It’s a fun fall recipe for the kiddos.  I’ve made a batch for the lounge at work for the past few years, and they go pretty fast.  Anyone else get excited when there is food at the office?  It just makes the work day more fun, right?  

Apple Butter Cinnamon Swirl Cookies

Apple Butter Cinnamon Swirl Cookies - A perfect Fall cookie recipe with an easy homemade dough and a cinnamon sugar apple butter filling.

Ingredients

Dough:

Toggle ingredient group

• 2 sticks butter, softened
• 3/4 cup sugar
• 1/4 cup brown sugar
• 1 large egg
• 2 tsp vanilla
• 2 1/4 cups flour, plus more for dusting
• 1 1/2 tsp baking powder
• 1/2 tsp salt

Filling:

Toggle ingredient group

• 1 cup apple butter
• 1 tbsp brown sugar
• 1/2 tsp cinnamon
• 3/4 cup finely chopped pecans

Instructions

1. Using a stand mixer or hand mixer, beat butter until creamy.  Add sugars and beat until well mixed.  Add egg and vanilla and beat well.
2. Mix flour, baking powder, and salt in a separate bowl.  Gradually add flour mixture to butter mixture and beat well.
3. Scoop out dough onto plastic wrap and wrap up while shaping it into a ball. Chill for an hour.
4. Take out dough, unwrap it, and place it onto a sheet of waxed paper that has been dusted with flour.  Dust dough with flour as well.  Roll out dough to a 12 x 9 rectangle.
5. Mix apple butter with brown sugar and cinnamon. Spread apple butter mixture evenly over dough.  Top with pecans, and press them down lightly.
6. Begin rolling up dough on long side.  Once rolled, wrap up in the wax paper, place on a pan, and chill in freezer for about 2 hours or until firm.
7. Remove and let sit out about 5 minutes.  Slice 1/4 inch thick, and place on baking sheet lined with parchment paper.
8. Bake at 350 degrees for 12 to 14 minutes. Remove to a cooling rack to finish cooling.

If you like easy dessert recipes like me, then this Pumpkin Toffee Poke Cake is the one for you to make this fall!  It starts with a box cake mix, which is usually my go-to dessert strategy.  Once you doctor it up a bit with canned pumpkin and cinnamon, it completely transform the batter for fall.

Canned sweetened condensed milk also doesn’t hurt any recipe, am I right?  It’s like liquid gold in a can.  Follow it up with caramel drizzle and chopped Heath bar candy and you have yourself a great little dessert that was super easy!

Tips for making this Pumpkin Toffee Poke Cake

• Make sure you buy canned pumpkin and not pumpkin pie filling.  
• If you can’t find milk chocolate toffee bits, you can chop your own Heath bars. 
• You can make homemade whipped cream for an extra special touch.

Pumpkin Toffee Poke Cake - An easy pumpkin dessert recipe filled with toffee and caramel and perfect for the fall season!

Ingredients

• 1 box yellow cake mix
• 1 cup canned pumpkin
• 1/2 cup milk
• 1/3 cup vegetable oil
• 4 eggs
• 1 tsp pumpkin pie spice
• 2 tsp cinnamon
• 1 can sweetened condensed milk
• 3/4 to 1 cup milk chocolate toffee bits
• 8 oz cool whip
• Topping: jarred caramel sauce

Instructions

1. Preheat oven to 350.
2. In a large bowl, beat cake mix, pumpkin, milk, oil, eggs, pumpkin pie spice, and cinnamon on low speed until mixed and then increase speed to medium and beat for 2 minutes. Pour into 13 x 9 pan and bake for 25 minutes or until center is set and toothpick comes out clean. Let cake rest for about 5 minutes.
3. Using the handle of a wooden spoon, poke several holes through the cake in rows. I make about 20 holes.
4. Drizzle the sweetened condensed milk into all the holes and on top of the cake. Next, drizzle caramel sauce into holes. I do not measure this amount. I just drizzle it all around. Sprinkle with about 1/2 cup of toffee bits over the top. Allow cake to cool.
5. Top with cool whip. Sprinkle with remaining toffee bits. You can drizzle more caramel at this point and refrigerate or you can drizzle the caramel once you slice and serve it. You can serve it once cooled, but we like it best refrigerated a few hours before serving.
