					<description><![CDATA[I made this breakfast cake earlier in the week and have eaten it each morning for breakfast.I love that the apples were shredded. I think it gave such a good texture and it stayed moist! Delicious and easy. You could drizzle it with icing and it could be a dessert! Will definitely make again!]]></description>

					<description><![CDATA[I used 1C unsweetened applesauce instead of apples. I had 1 very ripe banana so I mashed it and added it to the batter. I also had about 1/2C of cranberries so I cut them and added them to the batter. I think using applesauce made the batter much less thick. I used a 9 X 9 inch square baking pan. The breakfast cake was moist, tall and fluffy. It was golden brown and fully baked at 32 minutes. I really like this recipe. It calls for minimal ingredients- 1 egg, 1C flour, 1C oats…. And you can successfully make additions and substitute applesauce for apples.]]></description>

					<description><![CDATA[I just made this using King Arthur gluten free flour.  I used only half of the recommended sugar and added one-half cup of raisins.  Also, I diced the apples instead of shredding them.  My vegetable oil of choice for this recipe was avocado oil.  The batter was quite thick but the end product was excellent.  The cake was moist and light.  It was still a little too sweet so I will probably cut the sugar by another quarter of a cup the next time I make this and I will definitely be making it again.  My husband loved it!  Thank you so much for posting this recipe.]]></description>
